Mega Fluffy Cinnamon Spice Pancakes

It’s so easy, don’t bother with pre made pancake mix! Plus, you can add yummy spices, apple sauce, berries, nuts, etc.

Ingredients

1 1/2 cup all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon sugar – I don’t think you need this if you’re using syrup or honey to eat with the pancake
1 1/4 cups milk
1 egg
3 tablespoons plain non fat or low fat yogurt
3 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
Try adding 1 cup chunky homemade applesauce. It’s delicious
Applesauce Receipe:
Core and chunk up (1/4 to 1/2 inch cubes) as many apples that will fill a 2 quart sauce pot. Add 1 cup water and a tablespoon of cinnamon. Cook for about 7 minutes until soft but not mushy. Put to one side and let it completely cool or put in fridge or freezer to use later.

Directions
Combine dry ingredients in large bowl. Make a well in the center and add milk, yogurt, applesauce and egg, mix until smooth. Warm the skillet on medium-high heat and add about a teaspoon of butter to coat it, then 1/2 cup of batter, turn pancake once the edges start to bubble.
