Do you have left over chicken broth after broiling or baking chicken?

My husband loves soups during the winter time and I’ve gone through several receipes to find something healthy that he will really enjoy. This year we’ve stumbled over a classic! Yes, chicken soup, with or without the noodles. My not so secret secret that my mom always did was to use the broth collected from the broiler pan or baking dish after cooking the chicken bits.

In addition to the chicken broth, I’ve also been saving the juices from our shank stew pot that includes worschester sauce, soy sauce, garlic and some chardonney which also includes the flavors from the onions, potatoes, parsnip, carrots, and mushrooms.

Before I forget. I always add Tumeric into my soups and stews. Not for the flavor but for the health benefits.

Ingredients:
Note: We like chunky soups so you may want to reduced the amount of some of the items or cut them into smaller pieces.
1 Medium-sized onion chopped into bite sized pieces
3 Large carrots sliced
3 Large celery stalks sliced
2 Tablespoons chopped garlic
1 Tablespoon olive oil
2 Cups cooked chicken, chopped into chunks – This can be cooked ahead of time and added to the soup near the end.
2 Cups cooked noodles – The noodles can be cooked in the soup pot, but I don’t want them over or under cooked.
1 or 2 boxes of store bought chicken broth. In case you don’t have enough on hand from your broiled chicken (make sure to remove the layer of fat from your homemade broth)
1 Can diced tomatoes
1 Cup green beans fresh or frozen
1 Cup coarsly chopped mushrooms. These could be left out
Black pepper & salt to taste
1/8 Teaspoon rosemary
1/8 Teaspoon red chili flakes
1/8 Sage and thyme
2 Cups spiral noodles

Instructions
In a large soup pot, throw in the olive oil, onions and garlic. You can throw in the noodles into the pot, but I like to cook them separately and add them at the end, same with the chicken. Cook the onions until they start to appear translucent. Add carrots, celery, mushrooms, and the left over chicken broth. Add the spices and more broth if need be. Bring to a rolling boil. Add green beans, tomatoes, noodles and chicken. Note the noodles will soak up the broth, so you may need to add more.
